Our favourite granola recipe & why cookies make everything better

A few things that we are grateful for during this lockdown...

1. Having more time to enjoy the start of the day, breakfast!

2. Having more time for baking! (With sweet toothes like ours, this is SUCH a bonus).


Granola recipe

Homemade granola is one of those luxuries in life that (in our opinion) one only ever gets to experience when ones life is sorted. Once the washing and the bedroom and the brain is feeling relatively sorted, only then does one think to make homemade granola (well at least that's how it goes for us). 

Thankfully, lockdown has led us to this point! We get our ingredients from GoodFor, which is open, yay! Otherwise bulk bins at regular supermarkets will have everything you need and more. The key that we've found with homemade granola is that roasting it low and slow always gets the best results! Like they say, good things take time :)



3/4 cups of almonds

1/2 cup of pumpkin seeds

1/2 cup of buckwheat

1/2 cup of coconut


1 cup of oats (substitute for quinoa flakes for a gluten-free option)

1 Tbs of cinnamon

1/2 a teaspoon of salt

1 teaspoon of pure vanilla extract

1Tbs of maple syrup

1Tbs of olive oil or coconut oil



Preheat your oven to 150 degrees celcius on fan bake.

Using a large bowl, mix all the wet ingredients together.

Add in all the dry ingredients to the wet mixture, and mix until thoroughly combined.

Poor the granola into a large baking tray, and roast for 60 minutes, taking the tray out to mix every 15 minutes. 

Just like that, you'll have delicious homemade granola to keep your belly happy as larry every morn!  


 Cookie hack (aka.... use an amazing baking mix)

Our local cafe Hello Friends & Allies does the BEST baking, and Sno Cafe just down the road does these amazing vegan cookies, sooooo we've had to up our game to ensure we aren't missing out on these (very) crucial treats. 

Luckily, we've had a stash of Hill St Wholefoods baking mixes in the pantry. On the weekend we made the 'Chewy Choc Chip Cookies' and quite frankly, ate the whole batch in a day... (there's only 3 of us) ha. Elaina, (a kiwi badass) has nailed creating this mix. They were just that good.

The beauty of these is that they suit everrrryone! GF, DF and with a vegan option, no one has to miss out, yay!
