How did you get into baking, and what were your first favourite flavours?
I have been obsessed with baking for as long as I can remember. I believe my love for it started around the age of 5 when I would visit my grandparents in Paris and help them in the kitchen as they whipped up jams and tarts. I would watch in awe as they combined carefully selected ingredients and transformed them into a delicious whole. I adored being their miniature assistant (and their miniature taste tester). Later in life I would get home from school and push the homework aside, and just bake cakes. So it’s one of those cheesy stories where my die-hard passion led me to my career. Back then, and still to this day, fresh fruit features heavily in my creations. I've always been inspired to create recipes based around which fruits are in season and I think this is a big part of what makes my cakes unique.

What's been the biggest learning for you since owning your own business?
I’ve learnt an enormous amount in the last 10 years, but probably the biggest thing is around what makes a brand successful. This is something that I don’t really believe can be taught, I think it’s best learnt through first-hand experience. I’m still learning about the power and importance of a strong brand and always will be because things evolve, tastes change and new competition arises, so you constantly have to be on top of it.

What are some things you need to have around you to feel inspired and happy at work?
Music is probably the main thing! I ALWAYS have music playing. Next to me is usually a cup of herbal tea, a vase of flowers, and of course my to-do list (plus this nondescript red pen, which I believe has special powers and makes me achieve everything on my list when I use it).
What is your favourite way to get your mind away from work?
I love to sit on this outdoor seat we have and watch the sun set over downtown LA - it instantly relieves my stress because it makes me realise I'm just one person in this enormous world. If I get home after dark having missed the sunset, I'll pour a glass of wine, light a candle, run a bath and watch a show or a movie.
