Rocket & pear salad from the mastermind behind Winona Forever

Rosted Pear, blue cheese and rocket salad from 'Feed Me Feed Me' by Fran Mazza.

Roasted Pear, blue cheese and rocket salad  (from 'Feed Me Feed Me')

Serves 2



3 large brown pears

100g soft brown sugar

few sprigs of thyme

100g rocket

Balsamic vinaigrette

1/2 cup roasted walnuts

150g soft blue cheese, crumbled

micro-herbs to garnish



Preheat oven to 175 degrees celsius

Slice from the top of the pear downwards into slices 1cm thick and lay onto prepared tray.

Sprinkle with brown sugar and thyme. Bake for 20 minutes or until pears are cooked but still firm. Cool a little, but do not chill - they are best warm or at room temperature.

Place rocket in a large bowl. Gently toss with vinaigrette and salt and pepper to taste. Scatter pears, walnuts, and blue cheese on top and garnish with micro-herbs. This is best eaten when freshly made.
